Ingredients

1 oz.Dark Rum
1 ozGold Rum
2 oz.Orange Juice
2 oz.Pineapple Juice
.75 oz.Grenadine
2 DashesAngostura Bitters
GarnishOrange Slice
GarnishCocktail Cherry

Directions

  • Combine the Ingredients in a Rocks Glass over Crushed Ice
  • Swizzle with a Swizzle Stick until combined
  • Garnish with an Orange Slice and Cocktail Cherry

The Rum Swizzle, or the Bermuda Rum Swizzle, is the national drink of Bermuda. It is thought to have been invented in the 1800’s at Swizzle Inn in Hamilton, Bermuda. Swizzle Inn is the oldest bar in Bermuda and is the birthplace of Swizzle cocktails.

1 oz.White Rum
.5 oz.Dark Rum
.5 oz.Rhum Agricole
.75 oz.Lemon Juice
.75 oz.Pineapple Juice
.75 oz.Passion Fruit Puree (or Liqueur)
.25 oz.Simple Syrup
1 DashAngostura Bitters
To TopPort Wine
Garnish Mint Sprig

Directions

  • Combine the Liquor, Fruit Juice, Passion Fruit, Simple Syrup and Bitters in a Cocktail Shaker with Ice
  • Shake for 15 Seconds
  • Strain into a Rocks Glass over Cracked Ice
  • Float the Port on Top
  • Garnish with a Mint Sprig

The South Sea Dipper is another Trader Vic Cocktail, although it is one of his lesser known ones. It’s Wine Float makes it look sort of like the New York Sour.

.75 oz.Chambord (or CrĆØme de Cassis)

  • Combine the Ingredients in a Cocktail Shaker with Ice
  • Shake for 15 Seconds
  • Double Strain into a Cocktail Glass
  • Garnish with a Raspberry

The French Martini was invented in the late 1980’s and, like the Appletini, was one of the first fruity fake Martini‘s that were popular in the 90’s. The “French” part of the name refers to the fact that Chambord is a French Liqueur. Chambord was used originally, but now bars are more likely to use CrĆØme de Cassis. This is an Official IBA Cocktail.

.5 oz.Vanilla Vodka
.75 oz.Pineapple Juice
1 DashGrenadine

Directions

  • Combine the Vodka and Pineapple Juice in a Shot Glass
  • Add the Grenadine and let float to the bottom

The is a Shooter designed to sort of look and taste like a Pineapple Upside Down Cake. It tastes good and pretty easy to drink for those who don’t like shots.

  • Shake for 15 seconds
  • Double Strain into a Rocks Glass over Ice
  • Garnish with a Cocktail Cherry and Orange Wheel or Pineapple Wedge

The Jungle Bird was invented in Malaysia in the 1970’s. The tropical drink didn’t become popular around the world until the late 80’s.

Ingredients

1 oz.Light Rum
1 oz.Coconut Liqueur
2 oz.Pineapple Juice
2 oz.Cream of Coconut
1Pineapple Chunk
.5 CupStrawberries
1Banana
GarnishPineapple Wedge

Directions

  • Add the Alcohol and Strawberries into a Blender
  • Blend till combined
  • Pour into a Cup and set it to the side
  • After cleaning the blender, combine the remaining Ingredients into it with Ice
  • Blend till combined
  • Pour both blended mixtures into a Highball Glass at the same time
  • Garnish with a Pineapple Wedge and Straw

The Lava Flow is a Frozen Cocktail that is usually associated with Hawaii for obvious reasons. This drink is pretty similar to the Beach Towel and the Miami Vice.

  • Garnish with a Melon Ball

The Melon Ball is an 80’s Cocktail probably named after the Melon Baller, a kitchen utensil used to scoop balls of Honeydew, Cantaloupe, Watermelon and every other Melon. This drink is also commonly made into shooters.

Miami Vice

2 oz.Light Rum
1 oz.Lime Juice
.5 oz.Simple Syrup
2 oz.Cream of Coconut
2 oz.Pineapple Juice
1Pineapple Chunk
1 CupStrawberries
GarnishPineapple Wedge

Directions

  • Combine the Lime Juice, Simple Syrup, Strawberries and half of the Rum in a Blender with Ice
  • Blend till combined
  • Pour into a Hurricane Glass
  • Stick it into the Freezer while you make the top half
  • After cleaning the blender, combine the remaining ingredients in it with Ice
  • Blend till combined
  • Pour into the top half of the Hurricane Glass
  • Garnish with a Strawberry, Pineapple Wedge and Straw

The Miami Vice actually predates the 80’s, but it sure did become popular then. This frozen cocktail is essentially a PiƱa Colada on top of a frozen Strawberry Daiquiri. It look very similar to the Beach Towel and Lava Flow.

  • Stir till combined
  • Garnish with a Pineapple Wedge and Straw

The Midori Illusion was invented sometime within the 80’s and 90’s timeframe. Its original purpose was to be used for shooters, so if you want some green shots for St. Patty’s Day or something, this is not a bad idea.

  • Combine the Midori, Malibu and Pineapple Juice in a Hurricane Glass with Ice
  • Stir till combined
  • Float Cream on top
  • Garnish with a Pineapple Wedge and Straw

The Midori Splice is a Dessert Cocktail that is meant to taste like the Splice Ice Cream of Australia.
