Ingredients

1.5 oz.Dark Rum
.75 oz.Lime Juice
1 oz.Simple Syrup
6Mint Leaves
2 DashesAngostura Bitters
To TopChilled Champagne (Sparkling Wine)
GarnishMint Sprig

Directions

  • Combine the Rum, Lime Juice, Mint, Simple Syrup and Bitters in a Cocktail Shaker with Ice
  • Shake for 15 seconds
  • Double Strain into a Champagne Coupe
  • Top with Champagne
  • Garnish with a Mint Sprig

The Old Cuban was invented in 2001 by legendary bartender, Audrey Saunders, while she worked at a restaurant named Beacon in New York City. This is an Official IBA Cocktail.

1 PartChilled Champagne (Sparkling Wine)
GarnishRosemary Sprig

Directions

  • Fill half of a Champagne Flute with Champagne
  • Top with Cranberry Juice
  • Stir till combined
  • Garnish with a Rosemary Sprig

The Poinsettia is a Christmas cocktail that is the Cranberry version of a Mimosa. Like the Mimosa, the Poinsettia is also named after a flower, a flower that is associated with Christmas.

1 BarspoonMaraschino Liqueur
1Pineapple Chunk
(or .5 oz. Pineapple Juice)
.25 oz.Simple Syrup
2 DashesAngostura Bitters
To TopChilled Champagne
(Sparkling Wine)
GarnishLemon Slice

Directions

  • Combine the Whiskey, Maraschino Liqueur, Simple Syrup, Pineapple and Bitters in a Cocktail Shaker with Ice
  • Shake for 15 seconds
  • Double Strain into a Cocktail Glass or Coupe
  • Top with Champagne
  • Garnish with a Lemon Slice

The Price of Wales is a riff of the Improved Whiskey Cocktail. It was invented by King Edward VII in the early 1900’s. At the time, he was just the “Prince of Wales,” thus the name of the drink.

  • Pour the Strawberry Purée into a Champagne Flute
  • Top with Prosecco
  • Stir till combined
  • Garnish with a Strawberry

The Rossini is a Strawberry version of a Bellini. The drink is also named after an Italian composer name Gioachino Rossini.

GarnishFresh Fruit

Directions

  • Scoop Sherbet into a Champagne Flute leaving room
  • Top with Champagne
  • Garnish with a Fresh Fruit

The Sherbet Mimosa is essentially a dessert version of the Mimosa. If you are lactose intolerant, you can substitute the Sherbet for Sorbet, or if you want something more creamy, you can make it a float with Ice Cream instead.

RimCinnamon Sugar

Directions

  • Rim a Champagne Flute with Cinnamon Sugar
  • Fill half of the Glass with with Cider
  • Top with Champagne
  • Stir till combined
  • Garnish with an Apple slice

The Vermosa is a Mimosa, but with Apple Cider. It gets its name from the State of Vermont, because Vermont is well known for their Apple Cider. An Apple Crisp is a version of this drink spiked with Applejack. In a lot of the world, Cider refers to an alcoholic beverage, but in the U.S. it is non-alcoholic. It doesn’t matter what you use. If you want a bit more of a punch, use the alcoholic kind.
