Homemade Candied Ginger

Ingredients
| 1 Pound | Ginger Root |
| 5 Cups | Water |
| 1 Pound | White Sugar |
Directions
- Peel and Chop up the Ginger Root into small, bite sized Pieces
- Combine the Ginger and Water in a medium Pot over medium-high Heat
- Cover and let cook for 35 minutes
- Pour out most of the the Water, leaving about .25 Cup
- Add the Sugar and stir until the Sugar begins to Crystalize
- Remove the Ginger from to Pot and set aside to cool
Candied Ginger is is sometimes found at old General Stores, but otherwise hard to find. It can be eaten by itself, but is used as a Garnish for the Penicillin Cocktail.
